Katie Austin’s Seasonal Chopped Kale Salad Is the Ideal Healthy Fall Fare

It’s a great time of year to indulge in fresh foods, including this delicious dish.

Fitness influencer Katie Austin views healthy living holistically. In addition to offering effective workout content, the former college athlete loves to share healthy seasonal and celebration-specific recipes. She goes all-in on the notion that you have to fuel your body right for day-to-day living and for movement, in particular.

Her recipes are often healthy takes on her personal favorite dishes. In addition to posting the recipe on her fitness and health website, the influencer will typically film herself making each recipe and share it to her various social media channels. From apps to soups and salads fit for a healthy and satisfying dinner, the SI Swimsuit model really does it all. 

Austin’s most recent recipe post featured her fall kale chopped salad, a seasonal favorite. Check out the full recipe below.

Make the dressing

To a small bowl, add:

  • 2 tbsp. mayo
  • 1 1/2 tbsp. stone ground dijon mustard
  • 1 1/2 tbsp. maple syrup
  • 1 tbsp. olive oil 
  • Juice from 1/4 of a lemon

Stir until ingredients are combined.

Make the salad

  • 10 oz. kale
  • 1/2 tbsp. olive oil
  • 1 c. honeycrisp apples
  • 1/2 c. dates
  • 1/2 c. green onion 
  • 1 1/2 c. rotisserie chicken
  • 3/4 c. crumbled feta 
  • 3/4 c. crushed walnuts

1. Chop the ingredients

Stem and finely chop your kale. Massage with olive oil to soften. Dice your apples, dates and green onion.

2. Roast the walnuts

Put a pan on low to medium heat on your stovetop. Add walnuts and toss frequently for three minutes.

3. Shred the chicken

Using a fork or knife, cut the chicken into small, bite-sized pieces.

4. Combine and toss

Combine the chopped ingredients with the walnuts, chicken and crumbled feta. Add the dressing and toss.

“I usually don’t obsess over salads but I am obsessing over this one!!! You couldn’t ask for better Fall flavor combinations or texture,” Austin said of the recipe in her Instagram post. So, the next time you’re craving a seasonal salad, take Austin’s word for it and try this fall-favorite recipe.
