Katie Austin’s Seasonal Chopped Kale Salad Is the Ideal Healthy Fall Fare
Fitness influencer Katie Austin views healthy living holistically. Austin’s most recent recipe post featured her fall kale chopped salad, a seasonal favorite. Check out the full recipe below.
Make the dressing
To a small bowl, add:
- 2 tbsp. mayo
- 1 1/2 tbsp. stone ground dijon mustard
- 1 1/2 tbsp. maple syrup
- 1 tbsp. olive oil
- Juice from 1/4 of a lemon
Stir until ingredients are combined.
Make the salad
- 10 oz. kale
- 1/2 tbsp. olive oil
- 1 c. honeycrisp apples
- 1/2 c. dates
- 1/2 c. green onion
- 1 1/2 c. rotisserie chicken
- 3/4 c. crumbled feta
- 3/4 c. crushed walnuts
1. Chop the ingredients
Stem and finely chop your kale. Massage with olive oil to soften. Dice your apples, dates and green onion.
2. Roast the walnuts
Put a pan on low to medium heat on your stovetop. Add walnuts and toss frequently for three minutes.
3. Shred the chicken
Using a fork or knife, cut the chicken into small, bite-sized pieces.
4. Combine and toss
Combine the chopped ingredients with the walnuts, chicken and crumbled feta. Add the dressing and toss.
