Katie Austin’s Healthy Pumpkin Pie Bars Recipe Is the Ultimate Fall Treat

We can always count on fitness influencer Katie Austin for tasty, healthy recipes, particularly when it comes to preparing hearty meals and yummy treats with seasonal ingredients. The 2023 SI Swimsuit model shared her take on pumpkin pie bars on Instagram earlier this week, and we’ll be trying this one out ASAP.

“As soon as this week started, I had this overwhelming urge to start making very fall recipes,” Austin admitted in her Sept. 11 reel. “... I was craving healthified pumpkin pie bars, [and] this has been on my list to make since like July.”

The 2022 co-Rookie of the Year walked her followers through the instructions in her video, which you’ll find below.

Katie Austin’s Pumpkin Pie Oat Bars Recipe

  • 15 oz. can of pumpkin puree
  • 4 oz. applesauce
  • 2 eggs
  • 1/4 c. maple syrup
  • 1 2/3 c. rolled oats
  • 1/2 tsp. vanilla extract
  • 1/2 c. + 1 tbsp. coconut sugar
  • 1 tbsp. pumpkin pie spice
  • 1/3 c. milk of choice
  • 1/2 tsp. baking powder

Combine the above ingredients in a blender until smooth, then grease a small baking dish with coconut oil. Pour the mix into the pan and bake at 300 degrees F for approximately 30 minutes. Refrigerate for up to two hours before topping with vanilla Greek yogurt and another dash of pumpkin pie spice.
